Thou Mayest: For the Cafe Dubbel we use a single origin coffee grown by many small land holding farmers of the Kochere region situated in the Yirgacheffe zone of Ethiopia. Well processed Ethiopian coffees are known for their perfumed aromatics and bright complex citrus flavors and we chose this coffee to pair with the Belgian Style Dubbel in a way that will accent its higher noted delicate complexities. The goal was to add a burst of citric acidity to not only pair well but cut through the beer in a zesty but balanced way. We roasted this coffee on the very light end of the spectrum to highlight its brightness and hot brewed it to bring as much acidity forward as possible. In order to create the concentrate for this brew we developed a way to boost the extraction by manually infusing each filter brew before allowing it to finish on an automated brewer. Over the course of 80 brew cycles and 15 hours of extraction we were able to turn 60 pounds of coffee into 20 gallons of concentrate to blend with finished beer.
Torn Label: Defying expectations of both a coffee beer and a Belgian ale, our winter seasonal is a true original. We use a highly concentrated but very lightly roasted single origin Ethiopian coffee hot brewed by Thou Mayest, which imparts a burst of vibrant citrus acidity and cuts through a sweet, burnt caramel flavor profile. Aromas of clove, vanilla and apricot give way to notes of honeycomb toffee and lip smacking maple syrup on the palate. The balance of unique coffee and Belgian yeast produces the impression of espresso soaked lemon peel floating in a glass of sweet, smooth bourbon.
