Quadjillo is a Belgian quad that is brewed with whole guajillo chilis. Not the spiciest of peppers, the guajillo chili we add is dried and creates a tea-like extraction when steeped in the whirlpool. They contribute a nice earthy and dark fruit complexity to the big sweet base beer. The aroma is like smelling a handful of dried chilis, but the first sip brings the Belgian candi syrup to the foreground. Perhaps not the most obvious combination but the chili aroma blends seamlessly with the sweet and spicy character of the base beer.
